This painting called "Hilda of Sweetgreen" is my dedication to the innumerable immigrants who come to this country seeking to escape the ofttimes horrors of their current life, be they poverty, violence, food scarcity, etc., hoping to find the better life America has always offered.  Hilda is an example of these hard working, conscientious, honest and honorable people. In this picture Hilda is diligently chopping lettuce so that the more fortunate among us can enjoy their healthy lunch outings at places like Sweetgreen. I want to patronize places like Sweetgreen so that people like Hilda have jobs and I eat healthily, and I only hope the owners of Sweetgreen and other such companies take good care of the many Hildas out there. Sweetgreen is a great success story of fast food casual restaurants. The people who make it work are largely unappreciated, underpaid and dedicated immigrants - like Hilda - who I saw chopping lettuce hour after hour - day after day for weeks before I never saw her working there again.
